Injeera – The Heart of Eritrean Cuisine: Healthy, Gluten-Free, and Naturally Nourishing

What Makes Injera So Special?

Injera is the iconic sourdough flatbread of Eritrea and the foundation of almost every traditional meal. Made from Teff, one of the oldest grains in the world, Injera offers a unique combination of taste, digestibility, and nutritional value.

At Injeera Stuttgart, we prepare fresh Injera every day – and, upon request, we also offer a 100% gluten-free version. Many of our dishes are naturally vegetarian or vegan, making Eritrean food an ideal choice for modern, health-conscious diners.

Teff – The Naturally Gluten-Free Supergrain

Teff is naturally gluten-free and packed with iron, calcium, fiber, and plant-based protein. With its low glycemic index, it provides long-lasting energy without feeling heavy.

Benefits of Teff at a glance:

  • naturally gluten-free
  • rich in minerals and nutrients
  • high in fiber for smoother digestion
  • plant-based and long-lasting energy

For guests with celiac disease or gluten sensitivity, we offer 100% gluten-free Injera with prior reservation.

Why Injera Is So Easy to Digest – The Power of Fermentation

Traditional Injera batter ferments over several days. This natural process creates its characteristic tangy flavor and significantly improves digestibility.
Just like high-quality sourdough bread, fermented Injera breaks down complex carbohydrates, making it gentle on the stomach and ideal for anyone seeking a wholesome meal.

Naturally Vegan and Vegetarian Eritrean Cuisine

Many Eritrean dishes are vegan or vegetarian by tradition, not by trend. Popular plant-based dishes include:

  • spicy lentils
  • fragrant vegetable stews
  • Shiro – a rich chickpea stew
  • fresh salads and herb-based accompaniments

Combined with Injera, these dishes create a balanced, protein-rich, and fully plant-based meal.

A Cultural Experience – Eating Together the Eritrean Way

In Eritrea, meals are shared from a large communal platter. Injera acts as plate, utensil, and bread all in one.
This shared way of eating fosters connection and turns the meal into a cultural experience – perfect for families, groups, and company gatherings.

Why Eritrean Injera Is the Perfect Choice

Whether you eat gluten-free, enjoy vegan dishes, or simply want to try something healthy and authentic, Eritrean Injera offers countless advantages:

  • nutritious & wholesome
  • gluten-free on request
  • easy to digest
  • ideal for vegan & vegetarian diets
  • perfect for group dining
  • authentically prepared in Stuttgart

Injeera is moving to Rotebühplatz! – Grand reopening on 28 October 2024.

Stuttgart’s most popular Eritrean restaurant, Injeera, will open its doors at its new location on 28 October 2024. After 16 successful years in the Bohnenviertel district, restaurateur Tesfamicael Sare, now a veteran of Stuttgart’s restaurant scene, is taking over the former premises of Fais Dodo. Following extensive renovation work, the owner is delighted to be able to delight his regular customers and a new audience with his culinary delights in the city centre.

Tess, as his friends call him, remains true to his authentic, successful concept: he still cooks himself, and his dishes are prepared fresh daily according to original Eritrean culinary traditions. Between zigni, injera, shiro, alicha, tumtumo, etc., vegetarians and vegans will also find a wide selection of delicacies – and at a fair price.

His new restaurant offers more space both inside and outside, which was necessary to meet the high demand. In addition, the new Injeera has an adjoining room that can be reserved for birthdays, company parties, celebrations, etc. in a private, cosy atmosphere.

Tess, Stuttgart’s most Swabian black man, as a friend remarks with a wink, came to Germany from Africa as a young man in the 1980s and gained a wealth of catering experience in establishments such as 451, Unbekanntes Tier, M1, Ebony and SAN’S. “These years of training gave me the courage to translate the culinary skills I had learned in my former home into my own gastronomic concept and open my own restaurant. After 16 years in the Bohnenviertel, I am now looking forward to experiencing a new chapter at Injeera with my guests.”
